I love carrot cake and I have found a way to make it sugar free, but still tasty. That way you can love cake without that guilty feeling.
It didn’t take my friends and I long to get through half the cake over a coffee catch up with the kids. Look at that delicious cake… follow these easy steps for a guilt free and tasty treat!
Purchase these ingredients. As you can see a very simple and healthy cake based on real food.
Combine all dry ingredients and mix well.
Finely chop walnuts and grate carrot.
Mix in eggs one at a time and then add melted butter to dry mix, combining well.
Add grated carrot and walnuts and stir in buttermilk slowly. Cake mix should look like this.
Pour mix into a 6 x 4 inch round tin. Now it’s time to bake. Bake at 170 degrees Celsius (340 degrees Fahrenheit) for 35-40 minutes or until skewer comes out clean.
Once cake has been cooled for at least one hour, cut cake in half.
It is time to make the delicious cream cheese and lemon icing.
This can be done in three easy steps:
1. Cube cream cheese and butter, mix well then blend in milk
2. Add the zest of one lemon and lemon juice
3. Test icing to taste. If you have a sweet tooth and find it is not sweet enough add 1/4 cup of honey
Doesn’t this look delicious? Spread a thick layer of icing in the centre of the cake.
